G & N HOSPITALITY GROUP PTY LTD is seeking skilled Chefs and Cooks to join their team at restaurant La Disfida. They have a variety of pasta, main meals, Italian desserts and pizza. La Disfida Haberfield has a large menu filled with authentic Italian favorites. The ideal candidate will be responsible for preparing delicious and high-quality meals, ensuring food safety standards are met, and collaborating with the kitchen staff to deliver exceptional dining experiences.

Task & responsibilities

  • Preparing a variety of Italian dishes including pasta and pizza from our menu and based on custom orders 
  • Mixing, kneading and preparing a wide variety of fresh pasta doughs 
  • Making fresh tomato, pesto and white cream sauces 
  • Prepare and cook antipasti and seafood dishes, according to the menu 
  • Cook food according to menu and customer and function/events demands in an efficient manner 
  • Examining of food stuffs to ensure quality 
  • Minimise food waste whilst preparing meals 
  • Measure and assemble ingredients for menu items 
  • Monitor food stock and place orders, as needed 
  • Cook appetizers, like mozzarella sticks, pizza bites, garlic breads and salads 
  • Recommend new recipes to update our menus 
  • Maintain a clean cooking station and sterilize equipment 
  • Ensure food is properly seasoned, portioned and plated to meet our company standards including adding garnishes, sauces and the like.
  • Be able to work under pressure with a calm manner 
  • Follow correct procedures to ensure proper food safety and hygiene requirements as per company standards 
  • Assist in training staff 
  • Communicate appropriately amongst management and peers and both front and back of house staff (Kitchen and floor/waiting staff) 
  • Ensure waste is managed appropriately

Qualification & experience

  • The employee must hold minimum of Certificate IV in Kitchen Management or equivalent 
  • Minimum one year of relevant experience 
  • Demonstrate knowledge of food hygiene and safe culinary practices 
  • Committed to delivering exceptional food quality and dishes with an ability to prepare, cook, portion and serve foodstuffs to the highest standards 
  • Knowledge of Italian Cuisine
